Enjoy great gluten-free snacks at your next Halloween party or get together. Here’s some recipes.
Honey Mustard Snack Mix
2 teaspoons oil
2 teaspoons Dijon-style mustard
2 teaspons honey or corn syrup
41/2 cups puffed corn or rice cereal
1 cup gluten free pretzels
In a large bowl, combine the oil, mustard, and honey. Add the cereal and pretzels. Stir to coat.
Bake at 250 for 15 minutes. Remove and stir. Let the snack mix sit for 10 minutes before serving.
Makes about 5 cups.
6 corn tortillas or tostadas
1 151/2 oz. can refried beans
1 cup mild red enchilada sauce
1 cup shredded jack cheese
1/4 cup chopped tomatoes
1/2 cup shredded cheddar cheese
1/4 cup chopped green onions
If using corn tortillas, bake at 350 for 10 minutes or until firm.
Place 3 tortillas or tostadas on a greased baking sheet. Spread beans on each tortilla. Top with remaining 3 tortillas.
Pour suace on each tortilla. Top with jack cheese and tomatoes. Sprinkle each pizza with cheddar cheese and green onions. Bake in 350 oven for 30 minutes. Cut into fourths and serve. Dip in sour cream if desired.
