Making Caramel Treats for Halloween

My favorite Halloween recipes include old-fashioned caramel treats such as caramel apples and candy caramel corn.

If you have a little helper in the kitchen, such as a daughter, son or grandchild, have him stir the caramel for the Caramel Apple Recipe. If you have two helpers, have one hold the candy thermometer to see when the caramel reaches 230 degrees, while the other one stirs. Making homemade caramel apples is a fun Halloween cooking activity.

Children also love to put the skewers into the apples and coat the apples with caramel. Caramel apples and candy caramel corn are kid-friendly Halloween treats you can make from scratch. Happy Halloween!

Candy Caramel Corn Recipe

1 cup of corn, popped.
Bring to boil, five minutes:
2 cups of brown sugar
2 sticks of butter
1 cup of light corn syrup such as Karo
1 tsp. salt

1 tsp. vanilla and 1 tsp. baking soda

Pour over popcorn. Bake in oven at 225 degrees for 1 hour. Stir every 20 minutes. Use roaster pan.

Caramel Apples Recipe

14 ounces of sweetened condensed milk
1 cup sugar
1/2 cup light corn syrup
1 tsp. vanilla
6 medium apples
6 wooden skewers

Mix milk, sugar, corn syrup and salt in a heavy two quart saucepan. Cook over low heat, stirring constantly until mixture comes to a boil and sugar is dissolved. Continue cooking over low heat for 30 to 40 minutes, constantly stirring, until temperature reaches 230 degrees on candy thermometer. Remove from heat; stir in vanilla. Cool for five minutes. Insert wooden skewers into apples; dip in caramel until well covered. Cool on lightly greased baking sheet. Makes six.
