Healthy Halloween Treats

What’s a school Halloween party without fun treats? Whether a school has a “no-cupcake” policy or a “no nuts” rule, one of these recipes may just be the perfect choice for your child’s class.

Scary Caramel Apples

15 apples (try Braeburn or Gala for a yummy twist on an old favorite)

15 craft sticks

3 pkgs. caramels

3 tbsp. water

Halloween themed candy sprinkles

Wash and dry apples and insert a craft stick into the top of each one. Melt caramels along with the water in a large saucepan over low heat, stirring frequently. When caramel is smooth and creamy, dip each apple in, swirling to coat evenly and get rid of excess caramel. Dip still-sticky apples into a large bowl of candy sprinkles, then set stick-side-up on a flat surface covered in waxed paper. Allow to set at least one hour or overnight.

Boo-berry Muffins

1 ½ cup white flour

1 ½ cup whole wheat flour

1 ½ cup quick oats

2 tsp. baking powder

2 tsp. baking soda

½ tsp. salt

2 tsp. cinnamon

1 tsp. nutmeg

¾ cup dried blueberries

½ cup dried cranberries

1 ½ cup applesauce

2 cups skim milk

2 eggs, beaten

2 tbsp. canola oil

2 tsp. vanilla

Mix berries and milk together and set aside, allowing berries to soften, about 15 minutes. In a large bowl, stir together dry ingredients. In a smaller bowl, mix together applesauce, eggs, oil, and vanilla. Mix in milk/berry mixture, then pour all at once into dry ingredients. Stir just enough to moisten all ingredients and spoon into prepared muffin tins (using Halloween-themed liners would be a nice touch!). Bake at 350F for 15 to 18 minutes. Makes 2 dozen muffins. If you choose to use a “frosting,” soften a container of fat free cream cheese and whip. Spoon into a decorator bag with your preferred tip and squeeze onto muffins. Store cooled muffins in an airtight container and serve fresh.
