Low in Fat, High in Flavor

The Halloween season is fast approaching and that means Halloween treats everywhere. Here are some low fat treats that are sure to be a hit at any Halloween party.

Mini Pumpkin Cheesecakes

These deliciously creamy tidbits are a favorite and I get a request for them every year!

Crust

1 box graham crackers finely crushed

1 cup sugar substitute

1 cup butter

Filling

1 cup artificial sweetener

2 tsp. cinnamon

1 tsp nutmeg

1 tsp ginger

1 16 oz container cool whip free

1 can pumpkin puree

2 8 oz packages fat free cream cheese

60 Candy Corn

30 Small cupcake liners

Mix all ingredients for the crust the divide into cupcake liners about ¼ inches high. Mix all ingredients for filling, beat with mixer until creamy. Spoon mixture on top of graham cracker crust. Top each one with 2 candy corn and refrigerate for one hour.

Pumpkin Roll

My mother in law loved this recipe so much she started making it herself! It is easy to make and yummy to taste!

Cake

3 eggs beaten

2 cups artificial sweetener

1 tspn lemon juice

1 can pumpkin puree

1 tspn baking powder

1 ½ cups flour

3 tspn cinnamon

2 tspn ginger

1 tspn nutmeg

Filling

8 oz fat free cream cheese

2 cups cool whip free

Preheat oven to 350 degrees

Mix all cake ingredients together. Spray a jelly roll or a large cookie sheet (with an edge) with cooking spray. Pour into pan cook for 15-20 minutes until a toothpick comes out clean. Remove cake from oven cover with a towel; flip the pan so that the cake is on the towel. Roll the cake in the towel and allow it to cool. Meanwhile mix cream cheese and cool whip together until creamy. Unroll the cake and spread evenly with cream cheese mixture. Roll back and refrigerate for one hour to set. Cut into slices.
