Pumpkin Recipes for Halloween – It is not truly Fall until an army of bright orange pumpkins appear on porches throughout the neighborhood. The traditional Halloween décor also makes some tasty treats perfect for your celebrations or everyday activities. Begin a new family tradition with these recipes.

Wired Witch’s Brew Boost
1 can pumpkin puree
1 cup cream, half-and-half, or milk
4 tablespoons sugar (superfine sugar works best)
2 teaspoons cinnamon
1 teaspoon nutmeg
garnish: whipped cream
caramel sauce

Combine pumpkin, cream and sugar in a microwave safe dish. Whisk together and heat for 1 to 2 minutes until warm. Sprinkle in cinnamon and nutmeg. Add to hot coffee to taste. Garnish with whipped cream and caramel sauce, if desired.

Note: You can use pumpkin pie spice in place of the cinnamon and nutmeg.

Pumpkin Pancakes
Yield: 14- 4 inch pancakes
1 cup water
½ cup canned pumpkin
1 teaspoon cinnamon
1 teaspoon nutmeg
2 cups complete pancake mix

Mix the water, pumpkin, and spices until well incorporated. Combine with pancake mix in place of water as directed on the label. Pour about ¼ cup of batter onto preheated and lightly oiled griddle or pan. Cook over medium heat about one minute per side, until slightly golden.

Note: If batter is too thick, add water one tablespoon at time. Do not over mix batter.

Creamy Pumpkin Spread
¼ cup cream cheese, softened
¼ cup canned pumpkin
2 teaspoons cinnamon
1 teaspoon ground ginger
1 teaspoon nutmeg

Thoroughly combine all ingredients. This spread is delicious on bagels or whole-wheat toast.

Pumpkin Honey Butter
¼ cup butter, softened
1 tablespoon honey
2 tablespoons canned pumpkin
2 teaspoons cinnamon
1 teaspoon ginger
1 teaspoon nutmeg

Use a whisk or electric mixer set on low to combine all ingredients. Mix until well combined and fluffy. Enjoy pumpkin honey butter on pancakes or warm biscuits.

Vampire Fingernails (Toasted Pumpkin Seeds)
seeds fresh from your Jack o Lantern
olive oil
salt

Preheat oven to 325° F.Use your hands to scrape and pull away the pulp from the seeds. Discard the pulp and briefly rinse the seeds. Pat seeds dry with a dish towel.Spread seeds on a cookie sheet. Drizzle with olive oil. Sprinkle with salt as desired. Mix together with your hands. Spread seeds into an even layer.Bake until lightly browned, about 30 to 45 minutes. Stir with a spatula every 15 minutes to cook evenly.

Variations: Pumpkin seeds can be sweet or savory. Experiment with different flavors like cinnamon or chili powder.
