Three Bean Salad – Thanksgiving side dish

This three bean salad makes a great Thanksgiving side dish and can be prepared the day before so that you have more time available for your other dishes. The combinations of sweet and tart with the sugar and vinegar is a noted trait for this side dish. As are the wonderful combination of colors with the three beans, in this side dish recipe.

Depending on your serving portions, this three bean salad recipe will provide 8-10 servings. If your Thanksgiving table looks like ours, this side dish will add to the flavors on your table, as you enjoy your holiday feasts with your friends and family.

This three bean side dish also makes a great dish to bring over for a Thanksgiving holiday meal or a potluck dinner you can prepare it ahead of time, it travels easily and it serves up quickly.

Health Value

French green and yellow wax beans both contain vitamin A and C. They also contain less starch and protein than some of the other dried beans. This next piece of information is well known about the kidney bean’s name origins, which comes from its resemblance of a kidney. In some regions it is also known as a chili bean.

The onion seems to hold the title when it comes to health benefits. Some studies and old wives tales believe that the onion has the ability to cure everything as simple as the common cold to more serious health issues as heart disease. Onions also contain a component called quercetin which is a known to work as an anti-inflammatory.

Vinegar comes in several flavors, from rice, fruits and the standards balsamic. They are also made into ciders and malted varieties. We’ve seen recipes for using vinegars as pickling agents, adding spice to a dish, as a vinaigrette dressing on a salad and even marinades for meats.

Three Bean Salad

Ingredients

  • 1 can french green beans
  • 1 can wax yellow beans
  • 1 can of kidney beans
  • 1 onion – chopped
  • ½ cup of green pepper
  • ½ cup vinegar
  • ½ cup salad oil
  • ½ cup sugar
  • Salt and pepper

Preparation

  1. In a colander, empty the cans of beans and allow them to drain and give them all a good rinse. Next pour all of the beans into a large bowl and set them aside. Add in the chopped onions with the beans. Salt and pepper and toss the beans and onions together in the bowl.
  2. In a separate bowl add the sugar, vinegar and salad oil and mix the three ingredients until the sugar begins to dissolve. Next pour the liquid mixture over the beans and onions and toss to make sure that every piece gets coated with the liquid.
  3. Do a taste test; salt and pepper if needed. Put the three bean salad into a container that you can turn over while it’s chilling in the refrigerator. Flipping the container makes sure that all of the ingredients get marinated in this sugar and vinaigrette sauce. You need to chill this three bean salad for at least 3 hours or overnight so that the salad marinades before you serve it.

ServingJust before you are ready to serve your Thanksgiving meal, take the three bean salad out of the refrigerator and pour in a festive holiday bowl with two large spoons for easy serving.
