Pumpkin Pie Recipe With a Surprise Topping

Pumpkin Pie Ingredients

  • 1-9-inch unbaked pie shell
  • 15 ounce can of pumpkin
  • 1-14 ounce can sweetened, condensed milk
  • 2 tsp cinnamon
  • 1 large egg
  • 2 cups brown sugar
  • 1/2 stick of butter
  • 1 cup mini marshmallows

Pumpkin Pie Directions

  1. Preheat oven to 400 degrees. Use a fork to poke a few holes into the bottom of the pie shell. If preferred, a pie shell can be made from scratch instead of the store bought shell.
  2. In a large bowl, combine pumpkin, milk, 1 tsp cinnamon, and the egg. Using a wire whisk or a hand mixer, beat the pumpkin mix until all of the ingredients have been incorporated.
  3. Pour the pumpkin mix into the pie shell. Bake at 400 degrees for fifteen minutes. Reduce the heat to 350 degrees and bake for an additional twenty-five minutes. Remove from oven.
  4. Combine the brown sugar and 1 tsp cinnamon in a small bowl. Once the pie has been removed from the oven, sprinkle the sugar mixture all over the top of the pie. Drop pieces of the butter over the top of the pie in various places.
  5. Now cover the entire top of the pie with the mini marshmallows. Return to the oven for an additional ten minutes or until the marshmallows have melted and combined with the brown sugar.
  6. Serve at room temperature. This recipe also works great with a store bought pumpkin pie to not only spice up this Thanksgiving dessert but to add a homemade feel to the pie.

Caramel Pecan Pie Recipe

Pecan Pie Ingredients

  • 9-inch unbaked pie shell
  • 1 1/2 cup of pecan halves
  • 2 large eggs, beaten
  • 1 cup brown sugar
  • 1 tsp cinnamon
  • 1 cup light corn syrup
  • 1 Tbs all-purpose flour
  • 1 tsp vanilla extract
  • 1 tsp butter, melted
  • 1 cup caramel dip

Pecan Pie Directions

  1. Preheat oven to 375 degrees. Place the pie shell in on a cookie sheet and blind bake for five minutes. Remove from the oven and allow it to cool slightly before adding the pecan pie mixture.
  2. Combine the eggs, brown sugar, flour, and cinnamon; mix well with a hand beater or wire whisk. Add the corn syrup, butter, and vanilla. Fold in the pecans slowly to avoid breaking the nuts.
  3. Pour the caramel dip into the bottom of the pie shell. Spraying the cup with non stick spray before measuring the caramel will help the dip pour out of the cup. Gently shake the pie to spread the dip evenly around the bottom of the shell. Homemade caramel or melted caramel squares can substitute the caramel dip.
  4. Pour the pecan mixture into the pie shell. Bake the pie for 45 to 50 minutes. A toothpick inserted into the center will come out clean when the pie is done. Keep in mind to avoid the bottom of the pie because the caramel will show on the toothpick and therefore give the impression the pie isn’t completely cooked.
  5. Allow the pie to completely cool down to room temperature for it to set. Everyone will be a fan of this version of the traditional Thanksgiving pecan pie.

Sweet, Sweet Potato Pie Recipe

Sweet Potato Pie Ingredients

  • 1- 9 inch unbaked pie shell
  • 15 ounce can of sweet potatoes or 1 1/2 cups cooked and mashed sweet potatoes
  • 1 cup of brown sugar, packed
  • 1/2 cup mini marshmallows
  • 2 large eggs, beaten
  • 1 tsp cinnamon
  • 2 Tbs butter, melted
  • 1 tsp vanilla extract

Sweet Potato Pie Topping

  • 6 large eggs, separated
  • 2 cups granulated sugar
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon

Sweet Potato Pie Instructions

  1. Preheat oven to 375 degrees. Prick the bottom of the pie shell with a fork and blind bake it for ten minutes. Increase the heat to 450 degrees.
  2. Combine all of the pie ingredients in a large bowl. Mix well with a wire whisk or electric mixer. Pour into pie shell and bake in the oven for forty minutes. Remove from the heat. Create the topping while the pie is baking.
  3. With an electric mixer, beat the egg whites and vanilla on medium until white and foamy. Slowly, add 1/2 cup of granulated sugar and beat until well combined. Continue adding the sugar one half cup at a time. Once all of the sugar has been incorporated, continue beating the egg mixture until it is thick and soft peaks are formed. This is a sweet meringue. Set aside. Reduce the oven temperature to 325.
  4. Create a small layer of mini marshmallows around the edge of the pie. Sprinkle the marshmallows with 1/2 tsp cinnamon. Cover the exposed pie with the merigue. The marshmallows should be visable with the rest of the pie covered in peaks of meringue.
  5. Place pie back into the oven and bake for ten minutes. The points of the meringue should be a golden brown and the marshmallows slightly melted.
  6. This traditional Thanksgiving dessert is terrific served warm with a scoop of vanilla ice cream.
